I enjoy making these keto friendly coconut pancakes as they are delicious! They are great with some melted vanilla ghee and a little salt. When I first made them they were too dry so they would crumble easily but I discovered if you add a Tablespoon of Xanthan gum powder to them they turn out nice and fluffy. Here below the pictures is the recipe for these delicious pancakes.
Ingredients
4 medium eggs, whisked
1/2 cup fo coconut flour
1 cup of coconut milk
2 teaspoons of vanilla extract
1 teaspoon of baking soda
Stevia, or xylitol sugar to taste
4 Tablespoons of coconut oil to cook with
1 tablespoon of xantham gum powder (helps make them fluffy and not dry)
1/3 cup of stevia sweetened chocolate chips
Use medium low heat and turn over after two minutes.
